No-Bake Pina Colada Cake
Ingredients List
- 1 - (8 oz) can crushed pineapple
- 1/2 cup - butter or margarine, softened
- 2 cups - Domino® Confectioners Sugar
- 2 teaspoons - grated orange rind
- 1 - prepared pound cake
- 1/3 cup - shredded coconut (optional)
Instructions
Drain pineapple, reserving 1 tablespoon of the juice; set aside.
In mixing bowl, cream together butter, sugar and orange rind until light and fluffy. Stir in pineapple and 1 tablespoon pineapple juice.
Cut pound cake into 4 equal, horizontal slices. Spread 1/4 of filling on each slice of cake; stack each slice of cake on top of another. Sprinkle coconut over top layer. Wrap in foil and chill. Cut into slices and serve.
Makes 8 servings.
Quick Tip
Prepared pound cake may be found in the bakery section or frozen food section of supermarkets. Their size ranges from 12 oz up to 1 lb. Any size should work in this recipe.
