Jack-O'-Lantern Bars

Jack-O'-Lantern Bars

Bars:

  • 2 cups - all-purpose flour
  • 2 teaspoons - baking powder
  • 1 teaspoon - baking soda
  • 1/2 teaspoon - salt
  • 2 teaspoons - pumpkin pie spice
  • 2 cups - Domino® Granulated Sugar
  • 4 - eggs, lightly beaten
  • 1 - (15 oz) can pumpkin (about 2 cups)
  • 1 cup - vegetable oil

Frosting:

  • 2 cups - Domino® Confectioners Sugar
  • 1 - (3 oz) pkg. cream cheese, softened
  • 1/3 cup - butter or margarine, softened
  • 1 tablespoon - milk
  • 1 teaspoon - vanilla
  • 3 drops - yellow food coloring
  • 2 drops - red food coloring

Decorations:

  • Fall color candy corn and melted chocolate

Instructions

Preheat oven to 350°F. Grease and flour 15x10x1-inch baking pan.

Combine flour, baking powder, baking soda, salt, pumpkin pie spice and sugar in large bowl; mix well. Add eggs, pumpkin and oil. Stir until well blended. Pour into prepared pan.

Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely.

Mix frosting ingredients in small bowl until smooth. Frost cooled bars. Cut into squares. Decorate as desired.

Makes 24 bars.

Quick Melted Chocolate for Piping:
Place 1/4 cup chocolate chips in small, resealable plastic bag; seal. Place in bowl of very warm water, being careful to keep interior of bag dry. Knead chocolate occasionally until melted. Dry bag thoroughly. Cut small opening in tip of bag. Squeeze chocolate out to pipe on decorations. Chocolate can also be melted in the plastic bag in the microwave oven. Microwave on MEDIUM for 30 seconds at a time, checking and kneading chocolate until melted

Quick Tip

Tip: 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon ground ginger and 1/4 teaspoon cloves can be substituted for pumpkin pie spice.
